Did you know that 95% of the consumer cinnamon out there is of embarrassingly low quality? The real stuff is called Ceylon, or "true cinnamon" and is native to Sri Lanka and southern parts of India. True cinnamon is made from the inner bark of the Cinnamomum verum tree, is less common and has long been prized as a cooking spice. It has a distinctive shape (longer bark), lighter color, and delicate taste. It also has properties that contribute to many health benefits (anti-inflammatory, antioxidant, and antimicrobial effects). The less desirable and more common variety is Cassia.
