Did you know that 95% of consumer cinnamon is of embarrassingly low quality? The real stuff is called Ceylon, or "true cinnamon" and is native to Sri Lanka and southern parts of India (and is cultivated in other parts of the world including Mexico as well). True cinnamon is made from the inner bark of the small evergreen Cinnamomum verum tree, is less common, and has long been prized as a cooking spice. It has a distinctive shape (longer bark), lighter color, and delicate taste. It also has properties that contribute to many health benefits (anti-inflammatory, antioxidant, and antimicrobial effects). The less desirable and more common variety is Cassia.
