Our Cinnamon Sugar is made using raw cane sugar and both ground and stick Ceylon type Cinnamon from Mexico.  Ceylon Cinnamon is made from the inner bark of the Cinnamomum verum tree (Mexican Cinnamonor - Canella).  Ceylon cinnamon is less than 5% of the world's cinnamon supply and has long been prized as a cooking spice. It is quite expensive compared to the more common Cassia variety.  This Cinnamon makes the very best cinnamon toast.  And, try it in a latte - it is to die for!
