Pints, quarts, gallons and cases

Most of our twenty-three extracts come in pints (16 oz), quarts (32 oz) and full gallons (128 oz). Cases and larger volumes are quoted — tell us what you go through. Every one is a pure extract made from whole beans of a named origin — not a blend of unnamed lots, and not an imitation flavoring.

What it costs, and why

A gallon currently runs from around $99 to $379 depending on the extract, with pints and quarts scaling down from there. Three things set where a given extract sits in that range:

Origin. Bean cost varies enormously by country. Uganda sits at the accessible end; American-grown vanilla from Hawaii and Idaho is the most expensive extract we make, because the beans behind it are.

Fold. A double fold (2X) extract uses twice the vanilla bean per gallon as a single fold (1X), and costs close to double. We explain when that is worth paying for in single fold vs double fold vanilla extract.

Certification. Certified organic extracts carry the cost of maintaining certification through the whole supply chain.

Single fold or double fold?

Single fold is the strength nearly every recipe assumes, and the safe default for general baking. Double fold is built for production batches, frozen desserts, and anywhere vanilla gets diluted or baked off — places where 1X would disappear. If you are reformulating rather than substituting, 2X usually earns its price.

Buying in volume

The prices above are our list prices — buy a gallon today and that is what you pay. Wholesale is priced separately and always sits below list: tell us what you go through and we will quote you, usually within one business day, with a lead time attached. Freight is included on orders of 20 gallons.

As a rough guide, if you are going through a case of extract a quarter, or a few hundred dollars a month in beans, it is worth asking for a quote rather than buying at list. Request wholesale pricing.
